As I was deciding what to make for dinner tonight I glanced over at my veggie bowl and saw the amazing array of tomatoes I had stacked up waiting to be used.
I LOVE tomatoes! I can eat them like they are apples, especially freshly picked from the garden. But, I have so many tomatoes that are all ripe and they need to be used. So I decided on a nice simple marinara sauce with pasta for dinner. Pasta is always a hit around this house and with this simple marinara it can be ready in no time.
Making your own Marinara is quite simple and so much better than out of a jar. Don’t get me wrong, those jars can be convenient in a pinch, but if you have the ingredients, making your own is much more satisfying. I know some of you are from hard core Italian families that have amazing sauce recipes lying around that take hours to make. And you will tell me that you can’t make a good marinara in less than 20 minutes. Okay then, maybe this isn’t an authentic marinara. This is just a simple, fresh from the garden, yummy tomato sauce that you happen to put over pasta. Enjoy.
Marinara with Mushrooms
1 Tablespoons Olive Oil
4 cloves garlic
1/8 teaspoon red chili flakes
80z button mushrooms, sliced
4 nice sized tomatoes, diced
1 teaspoon oregano
1 teaspoon thyme
1/2 teaspoon salt
ground black pepper to taste
4-5 nice fresh basil leaves, lightly chopped
your choice of pasta to serve it with
In a medium saucepan heat oil over medium heat. Add Garlic and saute for 30 seconds. Add in red pepper flakes and mushrooms. Cook until the mushrooms become tender, about 4-5 minutes. Add in the tomatoes, with all the juice too, and the remaining seasoning expect black pepper and basil. Let simmer on med/lo for about 10 minutes. In the meantime bring your water to boil and cook pasta according to directions. When pasta is almost done and in the basil and add black pepper to your liking. Toss the pasta and sauce and serve!
